- ¼ cup couscous
- 70 grams can Edgell Snack Time Chick Peas with Fiery Moroccan Spices
- 4 cherry tomatoes, halved
- 1 baby cucumber, sliced
- 1 tablespoon chopped fresh mint, plus extra mint leaves, for garnish
- Finely grated zest of ½ lemon

Method
STEP 1Place couscous in a bowl, pour over ¼ cup boiling water and cover with cling wrap. Stand for 2 minutes and fluff with fork.
STEP 2
Add Edgell Chick Peas, tomatoes, cucumber and mint and toss to combine. Serve sprinkled with lemon zest.
Tips
This salad is just as delicious with quinoa, rice or risoni, instead of couscous.
