Tomato, Red Onion and Basil Dip with Tortilla Chips

Ingredients

  • 2 pita breads, cut into strips
  • ½ baguette, sliced
  • 2 tablespoons extra virgin olive oil
  • 190g jar Providore d'Italia Bruschetta Mix - Tomatoes with Basil & Red Onion in Oil
  • 200g mixed olives
  • Fresh basil leaves, for garnish

Method

STEP 1
Combine half the oil and pita strips in a bowl and toss gently to coat. Arrange on a baking paper lined tray and set aside.
STEP 2
In the same bowl, add remaining oil, sliced baguette and toss to coat. Arrange on a separate baking paper lined tray. Cook pita strips and baguette in a preheated oven at 180°C for 8-10 minutes, until crisp and golden.
STEP 3
Arrange pita strips and baguette on a platter with Providore d'Italia Bruschetta Mix. Serve with mixed olives. Garnish with basil.
Tips
Serve with crackers or crudites.
