Ingredients
- 125g cup Coles Microwavable Brown Rice
- 3 Coles Cherry Tomatoes, quartered
- 1 Baby Cucumber, thinly sliced
- 70g can Edgell Snack Time Chick Peas with Fiery Moroccan Spices
- 2 tablespoons Coles Greek Style Natural Yoghurt
Method
STEP 1Cook rice following packet directions.
STEP 2
Stir tomatoes and cucumber through heated rice.
STEP 3
Spoon over Edgell Chick Peas, top with yoghurt. Serve.
Tips
Garnish with fresh mint leaves before serving.
