Mexican Rice

This Mexican style rice is so versatile, use it as a quick vegan friendly lunch or as a base for a family dinner!

Ingredients

  • 1 tablespoon Coles Classic Olive Oil
  • 2 tablespoons Leggo's Squeeze Tomato Paste
  • 1 tablespoon Coles Mexican Spice Mix
  • 1 red capsicum, cut into strips
  • 400g can Edgell Mexican Mix, drained and rinsed
  • 2 x 250g pouches Coles Long Grain White Microwave Rice

Method

STEP 1
Heat oil in a large non stick frypan over medium-high heat. Add Leggo's Tomato Paste, spice mix and cook for 1 minute or until fragrant and slightly darker in colour.
STEP 2
Add capsicum and Edgell Mexican Mix. Cook for 5 minutes until capsicum is softened.
STEP 3
Add rice and cook for a further 4 minutes or until rice is steaming hot. Garnish with coriander, lime and serve.
Tips
Garnish with lime wedges and fresh coriander leaves, before serving.
