Gourmet Sandwich with Tomato, Red Onion, Olives and Goat Cheese
This isn't any ordinary sandwich, with layers of goat cheese, fresh spinach leaves and topped with Providore d'Italia Bruschetta Mix, it's really elevated into the gourmet arena!
Ingredients
- 8 slices sourdough, toasted
- Olive oil spray
- 120g soft goat cheese
- Ground black pepper, to taste
- 2 cups baby spinach leaves
- 190g jar Providore d'Italia Bruschetta Mix - Tomatoes with Olives & Basil in Oil

Bruschetta Mix Tomatoes with Olives and Basil in Oil
Method
STEP 1Spray bread slices with oil and lightly toast. Remove and set aside.
STEP 2
Assemble sandwiches by spreading goat cheese on 4 slices of bread, season with pepper, top with ¼ spinach and Providore d'Italia Bruschetta Mix.
STEP 3
Top with remaining bread and serve.
Tips
Add different fillings to complement the bruschetta mix.
