Try this great toasted sandwich packed full of vegies and grilled bacon.

- 1/4 - 1/2 avocado, sliced
- 2 slices sour dough bread
- 2 slices short lean bacon, cooked
- Red capsicum, de-seeded and thinly sliced
- 1/4 cup baby spinach leaves
- 125g can Edgell Corn Kernels, drained
- 1/4 cup grated light tasty cheese
Place avocado on one slice of bread and lightly mash to cover. Top with bacon, capsicum, spinach, Edgell Corn Kernels and cheese. Cover with remaining bread and lightly butter the outside.
Cook in a sandwich press until golden brown and cheese melts.
Substitute a 125g can Edgell Chick Peas for the corn.
