Sift self-raising flour and baking powder into a large bowl. Stir in the Edgell Instant Mash, chives and grated cheese.
Make a well in the centre of the dry ingredients, add beaten egg, melted butter and buttermilk and mix with a wooden spoon until well combined.
Spoon the mixture into 12 greased medium muffin pans and sprinkle with parmesan cheese. Bake in a preheated oven at 200°C for 20 minutes.
