Potato And Chive Muffins


Muffins straight from the oven! What could be better?

  • 1 cup self-raising flour
  • 1 teaspoon baking powder
  • 1 cup Edgell Instant Mash
  • 2 tablespoons chopped chives
  • 1 cup grated tasty cheese
  • 1 egg, beaten
  • 60g butter, melted
  • 2 cups buttermilk
  • 1 tablespoon grated parmesan cheese


Step 1

Sift self-raising flour and baking powder into a large bowl. Stir in the Edgell Instant Mash, chives and grated cheese.

Step 2

Make a well in the centre of the dry ingredients, add beaten egg, melted butter and buttermilk and mix with a wooden spoon until well combined.

Step 3

Spoon the mixture into 12 greased medium muffin pans and sprinkle with parmesan cheese. Bake in a preheated oven at 200°C for 20 minutes.

Tasty Tip!

Add ½ cup chopped bacon or ham in Step 1 with the chives and cheese. Serve with cream cheese for spreading.
