Mexican style Chilli Con Carne with Edgell Mexi Beans.

- 2 teaspoon oil
- 1 small onion, finely chopped
- 400g lean beef mince
- 300g can Edgell Mexi Beans
- ½ cup beef stock
- 1 tablespoon tomato paste
- Tortillas and sliced avocado for serving
- lime wedges, for garnish
Heat oil in a frying pan and cook onion for 1-2 minutes. Add beef mince and cook for a further 3-4 minutes or until meat is browned.
Add Edgell Mexi Beans, stock and tomato paste. Simmer for 4-5 minutes, stirring occasionally.
Serve with tortillas and avocado and garnish with lime wedges.
For extra heat, add 1 chopped fresh red chilli.
