Italian Tomato & Borlotti Bean Soup

An Italian style soup with Edgell Borlotti Beans

Serves: 6

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 sticks celery, chopped
  • 1 clove garlic, crushed
  • 1 chargrilled red capsicum, chopped
  • 400g can diced tomatoes
  • 1 litre chicken stock
  • 400g can Edgell Borlotti Beans, drained
  • Baby basil leaves, for garnish

Instructions

Step 1

Heat oil in a large saucepan, sauté onion, celery and garlic for 4-5 minutes.

Step 2

Add capsicum, tomatoes and chicken stock. Bring to the boil, reduce heat, cover and simmer for 10 minutes.

Step 3

Stir in Edgell Borlotti Beans and simmer for a further 5 minutes. Garnish soup with baby basil and serve.

Tasty Tip!

To grill capsicum, cut in half and place under a hot grill until skin blackens. Wrap in foil and cool before removing the skin and seeds.
