Golden Corn Fritters


A great Sunday morning breakfast treat!

Makes: 8


  • ½ cup self raising flour
  • 2 eggs
  • 2 tablespoons milk (please check this may need ¼ cup….)
  • 420g can Edgell Corn Kernels – No Added Salt, drained and rinsed
  • 2 spring onions, finely chopped
  • ¼ teaspoon smoked paprika (this may need to be increased pls cook one and check)
  • Oil, for shallow frying
  • Chipotle aioli, for serving


Step 1

Combine flour, eggs, milk, Edgell Corn Kernels, spring onion and smoked paprika.

Step 2

Heat oil in a frypan over medium heat. Drop heaped tablespoons of mixture into frypan spread to approximately 6cm in diameter. Shallow fry until golden, turn and cook other side. Repeat with remaining mixture.

Step 3

Serve with chipotle aioli.

Tasty Tip!

Fresh chives may be used instead or spring onion. Cornflour may be substituted with polenta.
