- 420g can Edgell Super Sweet Corn Kernels, drained
- ½ continental cucumber, thinly sliced
- ½ red capsicum, thinly sliced
- 750g can Edgell Tiny Taters, drained and halved
- Coriander leaves, for garnish
- Coconut and Chilli Lime Dressing:
- 1/3 cup light coconut milk
- 1 teaspoon grated lime zest
- 1 tablespoon sweet chilli sauce
