Fiesta Potato Salad


A colourful style combination of potato, cucumber, red capsicum and corn with a coconut lime dressing.

  • 420g can Edgell Super Sweet Corn Kernels, drained
  • ½ continental cucumber, thinly sliced
  • ½ red capsicum, thinly sliced
  • 750g can Edgell Tiny Taters, drained and halved
  • Coriander leaves, for garnish
  • Coconut and Chilli Lime Dressing:
  • 1/3 cup light coconut milk
  • 1 teaspoon grated lime zest
  • 1 tablespoon sweet chilli sauce


Step 1

Gently toss together Edgell Super Sweet Corn Kernels, cucumber, capsicum and Edgell Tiny Taters in a large serving bowl.

Step 2

Combine dressing ingredients and toss through salad. Serve salad garnished with coriander.

Tasty Tip!

Add 2 cooked and sliced chicken breasts in STEP 1.
