- ½ cup roasted salted cashew nuts or almonds
- 400g can Edgell Chick Peas, drained, reserving 5 tablespoons liquid
- 2 teaspoons lemon juice
- ⅓ cup chopped coriander
- Olive oil, for drizzling
- Toasted crusty bread, for serving
Combine cashew nuts, Edgell Chick Peas, reserved liquid, lemon juice and coriander in a food processor and pulse until smooth.
Spoon mixture into a serving dish and drizzle with a little olive oil. Serve with bread.
Almonds or macadamia nuts can be substituted for the cashew nuts.
