- 400g can Edgell Black Eye Beans, drained
- 1 clove garlic, crushed
- 1 teaspoon water
- ¼ teaspoon cayenne pepper
- Finely grated zest and juice of 1 lemon
- Crackers and vegetable sticks, for serving
Place Edgell Black Eye Beans, garlic, water, cayenne pepper, lemon zest and juice in a food processor. Season to taste. Blend until a smooth consistency. Adjust consistency by adding a little water if necessary.
Serve with crackers and vegetables sticks.
The size or juiciness of lemon will determine the amount of water required.
