Basil And Pine Nut Potato Salad


A delicious creamy pesto potato salad

  • 1 cup basil leaves
  • 1 small clove garlic
  • ¼ cup toasted pine nuts
  • 2 tablespoons grated parmesan cheese
  • 1/3 cup light sour cream
  • ½ cup whole egg mayonnaise
  • 822g can Edgell Tiny Taters, drained
  • Extra pine nuts and basil leaves, for serving


Step 1

Combine in a food processor basil leaves, garlic, pine nuts, parmesan cheese, sour cream and mayonnaise and pulse until smooth.

Step 2

Place Edgell Tiny Taters in a bowl, add dressing and lightly toss to coat.

Step 3

Serve sprinkled with extra pine nuts and basil leaves. Serve immediately.

Tasty Tip!

Garnish with shards of grilled prosciutto, if desired.
