Tender pieces of asparagus baked in a cheesy egg mixture makes for the perfect lunch or light dinner.

- 2 rashers bacon, chopped
- 2 spring onions, finely chopped
- 4 eggs, lightly beaten
- ½ cup cream or milk
- 2 tablespoons plain flour
- ½ cup grated tasty cheese
- 425g can Edgell Asparagus Cuts & Tips, drained
Sauté bacon and spring onions in a small frypan for 1-2 minutes
Combine eggs, cream, flour and grated cheese in a large bowl and stir in Edgell Asparagus and cooked bacon mixture.
Pour mixture into a greased 23cm oven proof dish and bake in a preheated oven at 180ºC for 30 minutes or until set.
Omit bacon for a vegetarian option.
