Heat 1 teaspoon oil in a large frying pan, add bacon and cook for 1-2 minutes. In a medium bowl combine Edgell Instant Mash and boiling water. Stir in Edgell Sauerkraut and cooked bacon, season with pepper.
Shape mixture into ½ cup patties. Heat 2 tablespoons oil in a frying pan add patties and cook for 2-3 minutes on each side or until golden brown.
Serve as part of a "big breakfast" with barbecued sausages, mushroom, grilled tomato and wilted spinach.
