Minestrone is often made to serve a hungry family but it’s just as easy to make a single serve using Edgell and Birds Eye vegetables.

Cook time:10 mins
Place undrained Edgell Four Bean Mix, Leggo’s Tomato Paste, frozen Birds Eye Country Harvest vegetables, water and macaroni in a small saucepan. Bring to the boil and simmer for 10 minutes, stirring occasionally.
Serve minestrone with crispy toasted flatbread.
For a vegetarian option use vegetable stock.
