Mediterranean Chicken


Tender pan fried chicken tossed with Mediterranean style vegetables

Serves: 4


  • 1 tablespoon olive oil
  • 4 chicken breast fillets, cut into large chunks and skewered
  • ½ cup frozen Birds Eye Chopped Onions
  • 1 clove garlic, crushed
  • 1 teaspoon chopped fresh red chilli
  • 1 small zucchini, sliced
  • 1 red capsicum, cut into diagonal pieces
  • 400g can diced tomatoes, undrained
  • 8-10 frozen Birds Eye Baby Beans
  • 400g can Edgell Butter Beans, drained
  • Chopped fresh parsley, for garnish


Step 1

Heat oil in a frypan, add chicken skewers and cook for 10 minutes turning regularly or until cooked through. Remove and set aside.

Step 2

Add Birds Eye Chopped Onions, garlic, chilli, zucchini and capsicum to the same frypan and cook for 2-3 minutes or until tender.

Step 3

Stir in tomatoes, Birds Eye Baby Beans and Edgell Butter Beans. Cover and simmer for 3-4 minutes. Serve chicken skewers with Mediterranean style vegetables and sprinkle with parsley.

Tasty Tip!

A quick and easy alternative to making your own chicken skewers is buying pre made skewers at the supermarket.
