Heat oil in a frypan, add chicken skewers and cook for 10 minutes turning regularly or until cooked through. Remove and set aside.
Add Birds Eye Chopped Onions, garlic, chilli, zucchini and capsicum to the same frypan and cook for 2-3 minutes or until tender.
Stir in tomatoes, Birds Eye Baby Beans and Edgell Butter Beans. Cover and simmer for 3-4 minutes. Serve chicken skewers with Mediterranean style vegetables and sprinkle with parsley.
