Spread lamb back strap with Leggo’s Tomato Paste and sprinkle with Mexican spice. Place into a greased baking dish and bake in a preheated oven at 190°C for 20-25 minutes or until cooked to your preference. Allow to rest for 10 minutes before cutting into diagonal chunky slices.
Place drained Edgell Four Bean Mix and Edgell Corn Kernels in a microwave dish and heat for 1 minute on medium high. Serve lamb back strap with warm bean salsa and baby cos leaves.
Cajun spice can be substituted with Mexican or Moroccan Spice.
